Saturday - 2017-01-14 Food Diary and a bit about my functional nutrition journey

Weight - 144.4 (actually down 2 from Wednesday, I guess that happens)

Food Diary:
Breakfast - whole wheat toast, 2 Tbsp chevre cheese and 6 slices cucumber - 194 calories
Morning snack - 1 cup unsweetened almond milk and 2 Tbsp almond butter - 220 calories
Lunch - 
Dinner - 


Working with a nutritionist:

Through my functional nutritionist I did a very thorough food elimination experiment over December 2016 and also a digestive test (gather poop for 3 days and put it in containers - ship it off to a lab).

- Food Elimination I did this years ago with no definitive results but this is what I did this time: no sugar (cane, honey, agave, etc...), no bread / grains of any type, no soy, no dairy including eggs, no corn.

Thoughts: while this was quite tough over the Holidays and yes I did have a few cheats - I felt quite clear headed / clear thinking after the first week.  I mean reading labels and not having anything with sugar in it.  There is sugar in everything which is the point - most people were not overweight before the 70's.  
As of today - I have added back eggs, wheat and dairy without ill effect.  When you add back food you want to add it at its purest form (organic, very good quality and not some synthesized result) you might get a reaction such as indigestion, fatigue, sleeplessness, mood swings.  I've noted nothing remarkable.

Decision: I will probably continue this at about a 90 to 95% rate to help remove the pre-Diabetes from my health
- Digestive Results: from my poop - I have good bacteria in my tract but I dont process fats well, I have some inflammation and possibly some out of balance.
- Solution:  digestive enzymes (she proposed several - I will try one), 1 tsp of apple cider vinegar in water 2 to 3 times daily, 1 cup bone broth daily to handle the inflammation and lack of full absorption.

My nutritionist wanted me to take a very expensive multivitamin, 3 or 4 solutions for my digestion plus Cod liver oil for highly effective D3 - I have calculated the cost of her solution at about $300 per month.  I have decided that since I suck at taking pills and dont have $300/mo to spend on vitamins - I will go for a good multi, a D3 vitamin and the digestive enzymes she suggested plus the easier apple cider vinegar and bone broth (which I can make).  While I appreciate her input - my budget will prevail in all health matters. 

My doctor does not think I have a digestion issue (I have not complained about gas, diarrhea, constipation, stomach pains) and she doesnt think anyone wants to take 15 pills a day.  She believes I have developed a glycemic intolerance in my old age and wants me to work on the sugars that are naturally in the food I eat.  She also would like to see me lose at least 10 lbs - I'd like to see me lose 15 but we shall see.

Is there anybody reading?

Well - I've been on Youtube and other places people vlog or blog and we're all trying to motivate each other to eat healthy, eat this not that, follow a doctor or a radical and get healthier.

Me too.

Why I'm doing this now?
This is my journey at the top of 56 trips around the sun and my body is changing in ways that frankly piss me off.  I am 5'3" and from age 19 to mid 40's - kept a fairly slim 125 to 135 weight.  I have eaten better and better every decade - following some of the best advice around.  Less bad carbs, more good carbs.  I've tried vegetarian and vegan and enjoy them but not enough to go for broke.  I love keeping fit and have had to modify how I do that from a few injuries.  I'm not a soda drinker nor a big sweets fan but I do have a few weaknesses I will talk about later.  Despite my best efforts, for the last 5 years I have seen my weight go up, my LDL cholesterol go up, my D3 go down and most recently - I am now pre Diabetic.  

I have been following several prominent experts in nutrition and particularly - former doctors who now stand on the platform that statins are a risk and good health can be had by eating good food, probably some supplements, exercise (of course) and management of stress levels (good luck - life isn't getting less stressful).  My own doctor had little to say on the "how do I lose weight?" subject - just "eat less fat" - and "go on this statin".  

The new program:
I feel a bit like a stranger to my own body and I feel bad.  I wanted to change this because feeling bad and getting a new strategy are not going to work.

I have a new doctor and I like her.  She knows a lot about nutrition.

I have a functional nutritionist and I think I like her.  More on this later.

I have opened my mind to trying things I haven't done well at before (taking pills) but this has to change or the rest of my life will suck!
